Hemp Protein Banana Bread

Delicious, wholesome, and full of fibre, this loaf will definitely satisfy your sweet cravings and keep you going for several hours with the helpful addition of hemp protein.
Hemp Protein Banana Bread
Ingredients
- 3 large, very ripe bananas,mashed
- 100g ground blanched almonds or almond meal
- 50g raw cashews
- 50g raw walnuts
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 60g natural hemp protein powder
- 30g chia seeds
- 4 tbsp maple syrup, honey, or rice malt syrup
- 1 tbsp lemon juice or apple cider vinegar
- 30g melted butter or coconut oil
- 3 eggs1 tsp good quality vanilla
- Handful of walnuts + 1/2 banana extra, to garnish (optional)
Method
- Preheat oven to 160 degrees celsius. Grease and line a loaf tin with baking paper.
- In a food processor, combine almonds, cashews, walnuts, baking powder, baking soda, salt, hemp protein and chia seeds. Pulse until mixture resembles a fine flour.
- In a seperate bowl, mash the bananas. Add the maple syrup, lemon juice, melted butter, eggs and vanilla and mix thoroughly to combine.
- Fold banana egg mixture through dry ingredients until well combined.
- Pour into prepared loaf tin. Top with extra banana and walnuts if desired and bake in pre-heated oven for 45 – 55 minutes, or until skewer inserted comes out clean.
- Let cool completely before slicing and enjoy with your favourite cup or tea!
