Chilli and Lime Salmon

This super easy dinner is done in less than 20 minutes and uses ingredients you’ll likely already have in your cupboard.
Feel free to swap the noodles for rice and use whatever veggies you have on hand.
Chilli and Lime Salmon
- 1/2 cup sweet chilli sauce
- Zest of 1 lime (reverse juice for serving)
- 1 tsp sesame oil
- 1 tsp soy sauce (GF if necessary)
- 4 skinless salmon fillets
- 450g pack hokkien noodles or microwave rice
- Veggies of choice: capsicum, carrot, peas broccoli etc.
Method:
- Preheat oven to 180 degrees celcius and line a baking tray with non-stick baking paper.
- Lay salmon fillets in the baking tray.
- Mix sweet chilli sauce, lime zest, sesame oil and soy sauce in a bowl. Reserve 2 tbsp and pour the rest over the salmon fillets.
- Bake for 15 minutes.
- Heat noodles according to package instructions and steam veggies. Mix reserved marinade through the noodle and vegetable mix.
- Serve salmon with noodle and vegetables and top with any leftover juices from the baking pan. Enjoy!
